On release the wine has a deep red colour. Its initial aromas are lifted perfume violets and peppery spice. The palate has a smooth velvety tannin structure and intense dark fruit characters. The wine clearly displays the new oak it was matured in, characters like spice, chocolate and vanilla are present throughout the wine. The wine has excellent persistence. The wine will reward carefull cellaring for at least 10 years.
The 2012 growing season with its mild conditions, moderate yields and no severe weather events provided excellent conditions for the growing of high quality Eden Valley Shiraz. This wine is sourced from a 2 hectare vineyard block planted in 1994. The vineyard is planted on sandy soil which is acidic and has little clay or organic matter on top of quartz bed rock. The soil has little water holding capacity and the vines require carefull irrigation to ensure balance.
The block was harvested in late March and the grapes were manually sorted prior to crushing. Fermentation was carried out in 8T submerged cap fermenters. The wine was run off daily and returned to the fermenter for 14 days. The skins were then allowed to sit submerged for a further 5 weeks prior to pressing. Maturation was carried out in new French oak barriques for 24 months.
