The wine has a pale straw colour with a green hue. The wine has a pungent lifted aroma that springs from the glass. Turkish delight, musk and mandarin juice characters leap from the glass. The palate is much more restrained, showing more subtle versions of the aromas. The wine is dry and has a good clean acid line. The wine has significant persistence.
The fruit was harvested during February 2016. Small bins of fruit were tipped into the top of the press to allow for gentle extraction of the juice. The parcel was carefully handled protect the delicate aromatic precursors present in the juice. The parcels was fermented at 12-14°C in stainless steel. Following fermentation wine was left on lees for 3 months prior to preparation for bottling.
