On release the wine is pale straw in colour with a green hue. The wine has aromas of ripe white peach, melon and a hint of pineapple. The palate shows intense peach and citrus flavours with a creamy mid palate. The palate is elegant and the flavours are peristent long after the wine leaves the mouth.
Harvest of the fruit commenced in late February 2015. The fruit was gently pressed and then cold settled. After racking the juice was fermented with a specialised Chardonnay yeast in stainless steel tanks. The fermentation temperature was carefully controlled to ensure an even fermentation. Minimal fining and filtration was engaged in the production of this wine.
